If your morning chai is non-negotiable, this chia pudding can give the same comfort more healthily. Creamy, lightly spiced, that feels gentle and also lightly sweet, it feels familiar but refreshed, and is perfect to have for easy, make-ahead breakfasts.
2 tbsp chia seeds 1 cup milk (dairy or plant-based) ½ cup brewed masala chai (cooled) 1–2 tbsp honey or maple syrup ¼ tsp cinnamon powder 1–2 crushed cardamom pods ¼ cup chopped fruits (apple, banana, berries) 1 tbsp nuts or seeds (almonds, walnuts, pumpkin seeds)
Make a strong cup of masala chai using tea leaves, cardamom and cinnamon. Let it cool down thoroughly so that it blends smoothly without impacting the texture of chia seeds.
In a jar, mix chia seeds, milk, cooled chai and honey. Mix everything well so that the seeds are evenly distributed, and the chai flavour melds into the base.
Keep the mixture aside for atleast 5 to 10 minutes, then mix it again to prevent the clumping of seeds.
Cover and chill for at least two hours or overnight. The mixture will turn thick into a creamy pudding having warm chai notes that you will feel through every spoon.
Once set, top it with chopped fruits, nuts or seeds. The crunch will balance the soft texture of pudding, whereas fruits will add a fresh contrast to the spiced base.
Serve it chilled for a refreshing feel or let it sit out for a short time for a softer bite. It works as a fibre-rich breakfast or also as a light, comforting dessert.
