Try making some homemade mango-stuffed kulfi in this unbearable heat, which is a unique flavour and is filled with the freshness of some ripe mangoes. It is a delightful Indian dessert which cannot be missed.
2-3 ripe mangoes (preferably Alphonso or Kesar) 1/2 cup condensed milk 1/2 cup heavy cream 1/4 tsp cardamom powder 2 tbsp chopped pistachios Sugar (optional, depending on mango sweetness)
Cut the tops of 2-3 mangoes, scoop out the seed and pulp, save the shells and tops.
Blend the mango pulp with condensed milk, heavy cream, and cardamom powder.
Fill mango shells with the mixture, close with tops and wrap in foil.
Freeze for 6-8 hours or overnight.
Peel, slice, and serve chilled.
