Mango sticky rice is a legendary Southeast Asian dessert that relies on the contrast between warm, coconut-infused glutinous rice and cool, sweet mango slices. The secret to this dish is ensuring the rice is cooked until perfectly soft and sticky, then letting it absorb the sweetened coconut cream. It is a simple yet sophisticated dessert that feels incredibly luxurious, especially when the mango is perfectly ripe and buttery.
1 cup glutinous rice, soaked for 3 hours  1/2 cup thick coconut milk  1/4 cup sugar  1 ripe mango, sliced  A pinch of salt and toasted sesame seeds Method
Steam the soaked glutinous rice until it is tender and translucent, which usually takes about 20 minutes.
Meanwhile, gently heat the coconut milk with the sugar and salt until the sugar has fully dissolved.
While the rice is still hot, stir in half of the coconut mixture and let it sit covered for 15 minutes to absorb the flavours.
Arrange the sticky rice on a plate with the sliced mango, drizzle with the remaining coconut cream, and garnish with sesame seeds before serving.
