Mango Sticky Rice: Enjoy This Thai Dessert Classic At Home

As mango season is upon us, savouring them in every way possible is the only way to enjoy them to the fullest. Milkshakes, shrikhand and aamras aside – break away for a change and make this deceptively simple dessert at home for the ultimate comfort.

INGREDIENTS [FOR MANGO STICKY RICE]

1 cup jasmine rice 2 cups water 1 cup milk 1 tablespoon sugar 1 ripe mango, sliced 1 pinch salt

INGREDIENTS [FOR COCONUT MILK SAUCE]

1 cup coconut milk ½ cup sugar 1 teaspoon cornstarch 1 teaspoon crushed peanuts

STEP 1

Combine the jasmine rice with water and sugar in a saucepan and cook until done as per packet instructions.

STEP 2

Add the salt to the milk and stir it into the rice, mashing gently as you go.

STEP 3

Cover and allow it to rest for 20-30 minutes while you combine the coconut milk, sugar and cornstarch in another saucepan.

STEP 4

Stir continuously until you have a thickened, creamy mixture which you can transfer to a bowl.

STEP 5

Use a greased bowl to shape the rice into a mound and place on a serving plate.

STEP 6

Place the sliced mango around the mound and pour the coconut milk sauce on top.

STEP 7

Garnish with crushed peanuts and serve.
