Rabdi is a traditional Indian dessert that can be relished as is or used as a garnish for other sweets. To give it a summer twist, why don’t you make mango rabdi? All you need to do is follow these 5 steps.
1 litre of full-cream milk 2 raw mangoes 2 tablespoons sugar ¼ teaspoon cardamom powder 2 tablespoons chopped nuts Chopped mango (for garnish)
Heat and simmer the milk and keep stirring till it reduces to about 1/3 of its original volume.
Once the milk is thickened, add sugar, cardamom powder, and chopped nuts.
After you get the desired consistency, remove the heat and let the rabdi cool.
Blend raw mangoes to make a puree and fold it into the rabdi.
Refrigerate for at least 2 hours, garnish with chopped mango pieces, and serve.
