Enjoy the tropical flavours of summer with Mango Muffins with Coconut Crumble. Perfect for breakfast, a snack, or dessert, these muffins are sure to impress.
1 ½ cups all-purpose flour 1 tsp baking powder ½ tsp baking soda ¼ tsp salt ½ cup granulated sugar 2 large eggs ½ cup plain Greek yoghurt 1 tsp vanilla extract 1 cup fresh mango, diced ¼ cup shredded coconut ¼ cup brown sugar ¼ cup unsalted butter
In a large bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
In another bowl, beat together the sugar, melted butter, eggs, Greek yoghurt, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mix it. Fold in the diced mango gently.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
In a small bowl, mix the shredded coconut, ¼ cup flour, brown sugar, and cold cubed butter mix it well.
Sprinkle the coconut crumble evenly over each muffin
Preheat your oven to 350°F (175°C), bake for 20-25 minutes. Enjoy!
