Mango malai is the summer dessert that feels rich and refreshing in every bite. Sweet mangoes are mixed with some creamy malai, making a simple treat that feels perfect for hot summer afternoons when you want to have something indulgent without too much effort.
1 cup ripe mango pulp ½ cup fresh malai (cream) 2 tbsp condensed milk 1–2 tbsp sugar (optional) ¼ tsp cardamom powder 1 tbsp chopped nuts (almonds, pistachios) A few strands of saffron (optional)
Take ripe, sweet mangoes and extract the smooth pulp.
In a bowl, whisk the fresh malai until it turns smooth and a bit fluffy, so that it blends easily with the mango pulp.
Now, add the mango pulp to the malai along with some condensed milk, and mix gently to make a rich, creamy mixture.
Taste and adjust the sweetness with a little sugar as per preference, then add some cardamom powder for a light aroma.
Mix in the chopped nuts and some saffron strands to add a slight richness that makes the dessert feel more festive.
Keep the mixture in the refrigerator for a couple of hours before you serve so that the flavours settle.
