Mango malai is one of those effortless summer desserts that feels rich without being too heavy. Prepared with fresh mangoes, chilled malai and dry fruits, this creamy treat works perfectly for sweet cravings.
2 ripe mangoes, chopped 1 cup fresh malai or thick cream 2 tbsp honey ¼ tsp cardamom powder 2 tbsp chopped pistachios 1 tbsp chopped almonds A few saffron strands 1 tsp rose water (optional)
Keep fresh malai or thick cream chilled before proceeding to make the dessert. Cold malai makes a rich texture and feels more refreshing.
Blend one mango to make a smooth puree and one chopped for texture. Fresh mango pulp will naturally sweeten the dessert without the need for excess sugar.
In a bowl, whisk chilled malai with honey, cardamom powder and rose water until it turns creamy.
Slowly add the mango puree to the malai mixture without overmixing it.
Now, add the chopped mangoes, pistachios and almonds while layering the dessert into the serving bowls. The nuts will give the crunch to the smooth, creamy mango texture.
Refrigerate this at least half an hour before serving so the flavours settle properly. Serve it chilled for a refreshing and comforting summer dessert.
