Nothing captures the beauty of the summer season like ripe mangoes, and this homemade jam is a perfect example of it. This mango jam turns ripe mangoes into a sweet, glossy spread that you can pair with everyday toast, desserts or have a spoonful of it to satisfy the sweet cravings.
2 cups ripe mango pulp ¾ cup sugar 1 tbsp lemon juice ¼ tsp cardamom powder (optional)
Peel and chop the ripe mangoes, then blend them to make a smooth pulp.
Transfer the prepared mango pulp to a heavy-bottomed pan, then add sugar. Mix it well and cook on a low flame, mixing in between so that it does not stick to the base or burn.
As the mixture gets heated, you will notice it will thicken and deepen in colour. Keep mixing patiently to avoid the formation of any lumps for even cooking throughout.
Add some lemon juice once the mixture gets a thick texture.
Cook until the jam gets a glossy, spreadable texture. You can examine it by placing a small drop on a plate; if it sets, it’s prepared.
Let the jam cool down thoroughly, then store it in a clean, airtight jar. Refrigerate and enjoy it with toast, pancakes or desserts.
