Mango fish curry is a tropical preparation boasting sweet and tangy notes. It has a creamy gravy celebrating the king of fruits and is often paired with steamed rice. This is a seasonal delight that home chefs should experiment with.
3 garlic cloves ¼ tsp fenugreek seeds 2 tbsp coconut oil 1.5 tsp coriander, chilli powder ½-inch ginger 500 gms of fish steaks 2 tomatoes, green chillies 250 ml of coconut milk Salt to taste 2 sprigs of curry leaves 5 shallots ½ cup of water
Heat coconut oil in a pan and saute fenugreek seeds, garlic, ginger, and shallots.
After a minute, add curry leaves and green chillies. Once the ingredients turn aromatic, add tomatoes.
Add powdered spices and salt when tomatoes are mushy and cook for 5-6 minutes.
Pour water and add mango slices and fish steaks. Put on the lid and cook the ingredients for 5-8 minutes.
Open and check with a skewer if steaks are cooked to perfection. Pour coconut milk and cook for 3 more minutes.
Sprinkle curry and coriander leaves on top and serve the gravy with rice.
