With mangoes ruling your kitchens all the time, if you’re looking for a healthy, protien-rich quick meal, try this mango-avocado paneer salad with orange dressing!
250g paneer, cubed ½ tsp salt ¼ tsp black pepper powder ¼ tsp garam masala ¼ tsp red chilli powder ¼ tsp chaat masala 2 tbsp fresh coriander leaves 1 tbsp oil 1 medium-sized cucumber, diced ½ medium-sized onion, sliced 1 large ripe mango, diced 1 small tomato, diced
1 medium avocado, diced 8-10 fresh mint leaves 1 tsp orange zest ¼ cup fresh orange juice 1 tbsp lemon juice ½ tsp salt ½ tsp black pepper powder ½ tsp chilli flakes 1 tsp honey
In a bowl, combine paneer, salt, pepper, garam masala, red chilli powder, chaat masala, and coriander leaves. Allow it to rest for 10 minutes.
In a small dish or jar, blend orange zest, orange juice, lemon juice, olive oil, salt, pepper, chilli flakes, and honey until thoroughly combined.
Heat the oil in a skillet and shallow-fry the paneer for 2-3 minutes per side, or until brown and gently crisp. Remove and divide into bite-sized pieces.
In a large bowl, mix the cucumber, onion, mango, tomato, avocado, and mint leaves.
Pour the orange dressing over the crispy paneer and gently stir. Serve immediately.
