Mango Achaari: Sweet Summer Condiment To Pair With Spicy Meals

Aam ki achaari is a non-negotiable summer condiment that pairs perfectly with all sorts of sabzis and gravies. To make the khatti meethi achaari at home, here is a five-step recipe you can follow.

Ingredients

2.5 cups grated raw mangoes 1/2 cup jaggery 1 teaspoon ginger 1 chopped green chilli 1 teaspoon oil 1/2 teaspoon red chilli powder 1/2 teaspoon coriander powder 1/2 teaspoon pepper 1/2 teaspoon kalonji seeds 1/3 teaspoon turmeric powder 1/4 teaspoon mustard powder 1/2 teaspoon vinegar

Step 1

Take some raw mangoes and grate them.

Step 2

Heat a pan and saute ginger, green chilli, pepper, kalonji seeds, red chilli, coriander, and mustard powder.

Step 3

Once fragrant, add the grated mangoes and turmeric powder to give a yellow colour.

Step 4

Mix in jaggery till it melts, and then add vinegar.

Step 5

Let the mango achaari cool, and then store it in air-tight containers.
