Manchow soup is a spicy, garlicky Indo-Chinese soup packed with vegetables and served with crisp fried noodles. It’s comforting, quick, and full of bold flavour.
1 tsp oil 2 garlic cloves (chopped) ½ inch ginger (grated) ¼ cup cabbage, carrot, and capsicum (finely chopped) 1 tbsp spring onion 2 cups water or vegetable stock 1 tsp soy sauce 1 tsp vinegar Salt and pepper to taste 1 tsp cornflour + 2 tbsp water Fried noodles for topping
Heat oil in a pan, add garlic and ginger, and fry for 30 seconds until fragrant.
Add chopped vegetables and spring onion. Stir-fry on high heat for 2–3 minutes.
Pour in water or stock and bring it to a boil. Add soy sauce, vinegar, salt, and pepper.
Mix cornflour with water and add to the soup. Let it simmer for 3–4 minutes until slightly thickened.
Serve hot, topped with fried noodles and more spring onion if desired.
