Manchow Soup Recipe: A Indo Chinese Comfort Bowl For Changing Weather

 Feeling under the weather is a common feeling during changing weather. A hot bowl of manchow soup feels warm and satisfying in every sip during this time. Filled with stir-fried vegetables and topped with crunchy noodles, manchow soup soothes you if you are suffering from a sore throat during the changing season.

Ingredients

11 tbsp oil 1 tbsp finely chopped garlic 1 tsp finely chopped ginger 2 tbsp chopped spring onion whites ¼ cup finely chopped cabbage ¼ cup finely chopped carrots ¼ cup finely chopped beans ¼ cup chopped mushrooms (optional) 3 cups vegetable stock 1 tbsp soy sauce 1 tsp vinegar 1 tsp green chilli sauce ½ tsp black pepper Salt to taste 1 tbsp cornflour mixed with 2 tbsp water ½ cup fried noodles Spring onion greens for garnish

Step 1

In a pan, heat oil and sauté chopped garlic, ginger, and spring onion whites until they turn fragrant and the raw smell fades away. Now, add all chopped vegetables and stir-fry them for 3 to 4 minutes.

Step 2

To the pan, now pour in the vegetable stock, add soy sauce, vinegar, chilli sauce, black pepper, and salt. Mix everything and let it boil gently.

Step 3

In a small bowl, make a cornflour slurry and mix it into the pan, and mix it constantly to prevent lumps. Simmer this until the soup gets a thick and silky consistency.

Step 4

Taste and adjust seasoning if required as per preference. You can add some extra pepper powder for a little heat or a little vinegar for a tangy taste.

Step 5

Switch off the flame and keep the soup resting for about 4 to 5 minutes so that the flavours settle nicely.

Step 6

Pour the prepared manchow soup into the bowls, add lots of crispy fried noodles and spring onion greens from the top, and enjoy.
