Malpua is one of the traditional North Indian sweets that feels festive and homely at the same time. Made with banana, milk, and a touch of cardamom, this simple recipe is perfect for when you want something sweet without too much fuss.

Ingredients

1 banana 1 cup milk 1 cup wheat flour 2 tbsp rava/suji, fine-grain 1 tsp fennel, crushed 1/4 tsp cardamom powder 2 tbsp cream ½ Oil 11/½ cup sugar 11/½ cup water 3 pods of cardamom Pinch of saffron

Step 1

Blend the banana and milk in a blender to make a smooth puree. Transfer it to a large bowl.

Step 2

Add wheat flour, suji, fennel, cardamom powder, and cream and mix well. Add milk to make it slightly runny.

Step 3

Whisk to make a lump-free batter and rest it for 30 minutes. Meanwhile, prepare sugar syrup by combining sugar, water, and cardamom in a saucepan and boiling it until the sugar melts.

Step 4

Boil to make the sugar syrup sticky. Add a pinch of saffron and mix well.

Step 5

Make malpua by ladling 2-3 tbsp of batter in hot oil and shallow frying it from both sides until golden.

Step 6

Once fried, drain the oil and put it directly in the sugar syrup. Take it out on a serving plate after soaking and garnish with chopped nuts.
