Cold, creamy and indulgent, this malai lassi blends thick yoghurt with sugar and cardamom, then finishes with a generous layer of fresh malai on top, creating the rich Punjabi glass that tastes like a sweet dairy treat.
1 cup thick chilled yoghurt 3 tbsp sugar ¼ tsp cardamom powder ¼ cup chilled water or milk 2 tbsp fresh malai (cream) 4-5 ice cubes 1 tsp chopped pistachios
Add chilled yoghurt, sugar, cardamom powder and water to a blender and blend until smooth and frothy
Drop in the ice cubes and blend briefly again to make the lassi cold and slightly airy
Pour the thick lassi into tall serving glasses
Gently place fresh malai over the top so it floats like a creamy layer
Sprinkle chopped pistachios and serve immediately while chilled
