Makki di roti is a traditional Punjabi flatbread made with maize flour. It has a rustic, earthy flavour and pairs best with sarson da saag. Because the dough is delicate, the rotis are shaped by hand rather than rolled.
2 cups maize flour ½ tsp salt Warm water as needed Ghee for cooking
Mix maize flour and salt in a bowl, then add warm water gradually to form a soft, pliable dough.
Take a small dough ball and knead it again briefly to smooth the surface.
Place it on a greased plastic sheet or parchment paper and gently pat it into a round roti using your fingers.
Lift the roti carefully and place it on a hot tawa, then apply ghee around the edges.
Cook on medium flame, flipping gently, until both sides develop golden spots and the roti turns firm.
