When prepared properly, besan halwa basically melts in your mouth. If you want to create it at home, follow these simple instructions.
1 cup besan or chickpea flour ½ cup ghee ⅓ sugar, as required 1 cup milk ½ cup water Mixed nuts, as needed 1 tsp cardamom powder 5-6 saffron strands 1 tsp rose water
Heat a pan on medium flame. Add besan and dry roast till it turns light brown.
Transfer it to a plate and keep it aside to cool. Heat some ghee, add chopped nuts to it and saute them for a few seconds.
Take another pan, put it on the flame, and boil water and sugar. Make a syrup to combine both ingredients.
Add more ghee, add the roasted besan and add milk, water, and sugar syrup. Mix until it starts to bubble.
Continuously stir the halwa until it is thick and creamy. Now add cardamom powder, rosewater, and saffron. Give a gentle mix and serve.
