Palak comes loaded with calcium, iron, Vitamin A and C, and potassium, besides several other health benefits. Here’s a quick recipe!

Ingredients

200g spinach, chopped roughly 2 cups of vegetable broth 3-4 cloves of garlic 1 tablespoon of butter 1 diced carrot ½  cup of peas 1 egg (optional) 2 teaspoons of black pepper powder Salt to taste

Step 1

In a pan, heat the butter and add chopped garlic at 160 °C - 170 °C on an induction cooktop. Cook them till they turn golden.

Step 2

Add the peas and carrots, along with salt, to break them down. Cook for another 8–10 minutes at 150 °C.

Step 3

After the carrots are soft, add the chopped spinach. It will take the spinach 2-3 minutes to soften. Reduce the heat to low.

Step 4

Add the vegetable broth. Add pepper and adjust the salt. Let the soup simmer for 10 minutes.

Step 5

You can add an egg to the soup for extra protein. After the soup comes to a boil, remove it from the heat. Serve!
