Sundal is a South Indian snack in which various chickpeas are stir-fried, often with a simple tempering of mustard, urad dal, asafoetida, curry leaves, and coconut. The burst of flavours is perfect for a sudden snack craving. Follow this recipe for a step-by-step guide.
½ cup of chickpea or chana ¼ cup of coconut, grated ⅛ teaspoon of asafoetida ½ teaspoon of mustard oil 1 teaspoon of urad dal 2 red chillies 8 curry leaves Cooking oil, as needed Salt to taste
Wash and soak the chana overnight. Strain it and wash it again. Set it aside.
In a pressure cooker, add water, the chanas, salt and put it over the heat. Set it for 3-5 whistles.
Remove the chana from the pressure cooker and place it in a bowl. Let it cool.
In a kadai, heat some oil. Add the red chillies, curry leaves and the spices. Temper it
Add the chana slowly into the kadai. Keep stirring until the moisture goes away.
Add the grated coconut and fry for a minute on medium heat. Serve sundal with tea or coffee.
