If you like paneer or have to make it every other day for your vegetarian dishes, skip the boring recipes and opt for something masala-dar. This dhaba-style paneer can be made in minutes and is loaded with veggies and spices. Let's look at this recipe.
– 250 grams paneer – 2 medium-sized onions – 2 medium-sized tomatoes – 2-3 green chilies – 1 teaspoon ginger-garlic paste – 1/2 teaspoon turmeric – 1 teaspoon red chili powder – 1 teaspoon coriander powder – 1/2 teaspoon garam masala – 1/2 teaspoon cumin seeds – Salt to taste – Fresh coriander leaves
Crumble the paneer and keep it aside. Finely chop onions, tomatoes, and green chilies. Heat oil or ghee in a pan or kadhai over medium heat. Add cumin seeds and let them crackle.
Add finely chopped green chilies and ginger-garlic paste. Sauté for a minute until the raw smell disappears.
Add finely chopped onions. Sauté until they turn golden brown. Then, add chopped tomatoes and cook until they become soft and mushy.
Once the tomatoes are cooked, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for a couple of minutes until the oil starts to separate from the masala.
Add crumbled paneer to the masala. Mix gently, ensuring that the paneer is well coated with the masala. Cook the paneer bhurji on low heat for about 5-7 minutes.
Sprinkle garam masala powder and mix well. Cook for another minute. Turn off the heat and garnish with finely chopped fresh coriander leaves.
