By sautéing colourful vegetables with traditional Indian spices, you transform humble oats into a vibrant, nutrient-dense bowl that flushes toxins and keeps your energy levels stable.
1 cup rolled oats 1 small onion, finely chopped 1/2 cup mixed vegetables (carrots, peas, beans) 1/2 teaspoon turmeric and 1/2 teaspoon garam masala 2 cups water 1 tablespoon oil or ghee Fresh coriander and a squeeze of lime
Heat oil in a pan and sauté the onions and mixed vegetables for 3–4 minutes until they soften slightly.
Add the turmeric, garam masala, and salt, followed by the oats, and toast them for a minute to enhance the aroma.
Pour in the water and simmer over medium heat for 5–7 minutes, stirring occasionally until the oats are creamy.
Turn off the heat, stir in the fresh coriander and a squeeze of lime, and serve hot.
