The classic Bombay sandwich is all about layers, i.e. fresh vegetables, vibrant chutney, soft bread, and a little basic spices. It is crunchy, tangy, and comforting in every bite, delivering Mumbai’s street-style taste straight to your kitchen.
6 slices of white sandwich bread 3 tbsp butter (softened) ½ cup coriander leaves 2 green chillies 1 tbsp roasted peanuts 1 tsp lemon juice Salt to taste 2 tbsp water (for chutney grinding) 1 medium boiled potato (thinly sliced) 1 small cucumber (thinly sliced) 1 small tomato (thinly sliced) 1 small onion (thinly sliced, optional) 1 tsp chaat masala ½ tsp black pepper powder Butter for toasting
Make the green chutney by blending coriander leaves, green chillies, peanuts, lemon juice, salt, and water.
Spread the softened butter evenly on the bread slices to prevent sogginess when you apply the chutney.
After this, spread a generous layer of green chutney over the buttered bread evenly.
On the bread slices, arrange the sliced boiled potatoes, cucumber, tomato, and onion evenly.
Sprinkle the chaat masala, salt, and pepper on the vegetables. This seasoning will give the sandwich its signature street-style taste.
Cover it with another bread slice from the top, butter the outer sides, and toast it lightly in a pan or sandwich griller. Serve hot with mint chutney.
