Atta halwa, often served as kada prasad in Sikh traditions, holds deep cultural and spiritual significance in Gurudwara kitchens. Prepared with equal care and patience, the halwa relies on slow roasting of whole wheat flour in ghee, which develops its signature nutty aroma and smooth, glossy texture. The balance between roasting and sugar syrup determines the final consistency.

Ingredients

1 cup whole wheat flour (atta) ¾ cup ghee 1 cup sugar 2½ cups water ¼ teaspoon cardamom powder

Step 1

Heat ghee in a heavy pan and add atta, roasting on low heat with continuous stirring until it turns evenly golden and aromatic.

Step 2

In another pan, heat water and dissolve sugar fully to prepare a hot syrup.

Step 3

Carefully pour the hot sugar water into the roasted atta while stirring continuously to avoid lumps.

Step 4

Cook on low heat until the mixture thickens, turns glossy and begins to leave the sides of the pan.

Step 5

Add cardamom powder, mix well, garnish with nuts and serve hot.
