Gujarati masala khichdi brings together rice, dal and gentle spices in a warm, homely bowl. The base of onions and tomatoes adds depth, while turmeric gives the dish a soft golden colour. A long, slow simmer helps the grains turn creamy and soothing without feeling too heavy.
½ cup rice ½ cup moong dal 1 onion (chopped) 1 tomato (chopped) 1 tsp cumin seeds ½ tsp turmeric Salt and ghee
Wash the rice and dal together and keep aside.
Heat ghee, then sauté cumin seeds, onions and tomatoes.
Add rice, dal, turmeric, salt and enough water.
Brush with a little oil and serve hot.
