Make This Frankie Recipe To Enjoy As Your Next Chai Time Snack

A frankie roll is a timeless street food classic that is versatile and delicious—complete with an assortment of fillings, condiments and accoutrements. In order to recreate this at home, using leftovers that need sprucing up, is a great way to make them into a fun, portable snack.

INGREDIENTS

1 leftover paratha 1 egg, whisked ½ cup leftover potato sabzi OR ½ cup leftover chicken curry 1 cube cheese, grated 1 small onion, chopped 1 green chilli, chopped 2 teaspoons chilli oil/hot sauce 1 pinch chaat masala 1 tablespoon oil 1 tablespoon freshly chopped coriander

STEP 1

Drizzle some oil on a pan and warm up the paratha on one side until it becomes slightly crisp.

STEP 2

Set aside on a plate while pouring the whisked egg mixture into the same pan and placing the non-crisp side of the paratha on top.

STEP 3

Meanwhile, if using chicken curry, shred the meat using your hands and discard any bones before flipping the paratha over and layering it in a vertical arrangement in the middle.

STEP 4

Add the potato sabzi in the same way, if opting for a vegetarian frankie, before layering the grated cheese, chopped onion, green chilli and chaat masala.

STEP 5

Drizzle the chilli oil or hot sauce on top and sprinkle some fresh coriander before using a spatula to bring one end of the paratha to cover the middle, followed by the same motion on the other end. Serve hot.
