Thecha is a traditional Maharashtrian condiment prepared of peanuts, garlic, salt, coriander leaves, and green chillies. This stir-fry becomes a fantastic complement to your meals when you add mushrooms to it.
8-10 green chillies 6 garlic cloves 1 tbsp roasted peanuts 2 tbsp oil 250g button mushrooms, sliced 1 small onion, sliced 1 small capsicum, sliced ½ tsp cumin seeds Salt, to taste 1 tbsp chopped coriander 1 tsp lemon juice
Heat oil in a pan and roast the peanuts for a few seconds. Add the garlic cloves and chillies. Saute until charred.
Using a mixer grinder, coarsely crush the garlic, chillies and peanuts. Your thecha is ready.
Heat some oil in a frying pan. Add cumin seeds and let them crackle. Add onions and cook until golden.
Add mushrooms and capsicum. Stir-fry on high heat until mushrooms begin to brown.
Mix in 2tbsps of homemade thecha and salt. Toss well and cook for 2-3 minutes.
Add lemon juice and garnish with coriander. Enjoy thecha mushrooms stir-fry!
