Since the tart pink berries are available in abundance this season, extend its flavour and presence longer at the breakfast table in the form of a deliciously chunky homemade jam. Balancing sweet, fruity flavours with a mellow sourness, the jam is perfect to use in bakes, spread over toast or simply enjoy spooned over French toast or pancakes.
500 grams strawberries, hulled ½ cup sugar Juice of ½ lemon ¼ teaspoon lemon zest
Rinse the strawberries and pat them dry with a clean cloth before cutting them into quarters.
Add them to a saucepan along with the sugar and lemon zest to cook over low heat until the juices are released.
Continue to cook further until the liquid begins to condense and the mixture thickens slightly.
Turn of the heat and add the lemon juice to stir well, cool completely and store in air-tight jars for up to three weeks.
