Sattu has been a staple in regions like Bihar for centuries, valued as a natural summer cooler that provides both hydration and sustained energy. Made from roasted gram flour, it is rich in protein and fibre, and traditionally consumed in both sweet and savoury forms. The savoury version, with spices and lemon, is especially popular for its cooling and digestive properties.
2 tablespoons sattu 1 glass cold water ½ teaspoon roasted cumin powder Black salt Lemon juice Chopped coriander
Add sattu to a bowl and mix with a small amount of water first to form a smooth paste without lumps.
Add remaining water gradually while stirring continuously.
Mix in cumin powder, black salt and lemon juice, adjusting to taste.
Garnish with coriander and serve immediately while chilled.
