Instead of sugary, fattening store-bought kulfis, homemade kulfis can be much healthier! This summer try to make this low-calorie fruit kulfi at home which can be made with fresh fruits. The best part is it takes only a few minutes! Let's explore.

Ingredients

1 small pumpkin Olive oil Salt and pepper to taste 1 cup breadcrumbs 1/2 cup grated Parmesan cheese 1 teaspoon garlic powder 1 teaspoon dried oregano 1/2 cup all-purpose flour 2 large eggs Ketchup or your favourite dipping sauce

Step 1

In a heavy-bottomed pan, combine the low-fat milk, non-fat condensed milk, and skim milk powder. Heat the mixture over medium heat, stirring constantly to prevent burning, until it reduces by about a third and thickens slightly.

Step 2

Stir in the sugar substitute, cardamom powder, and saffron threads. Continue to cook for another 5 minutes, ensuring the mixture is well combined and slightly thickened.

Step 3

Remove the milk mixture from heat and let it cool slightly. Once cooled, gently fold in the mixed fruit puree until well combined. Pour the mixture into kulfi molds or small paper cups.

Step 4

Place the molds or cups in the freezer and let them freeze for at least 6-8 hours, or until completely set. To unmold the kulfi, dip the molds briefly in warm water to loosen them.

Note:

Use ripe and naturally sweet fruits to enhance the flavor without needing to add extra sweeteners. Ensure the fruit puree is smooth to give the kulfi a creamy texture.
