Kachori tops the list of street snacks everytime! Served with chutney or a spicy aloo or chole sabzi, you can now make Rajasthani-style khasta kachori at home by following this step-wise recipe.
2 cups maida 1/4 cup ghee 1/2 teaspoon salt 1/2 cup soaked moong dal 1 tablespoon oil 1/2 teaspoon cumin seeds A pinch of asafoetida 1 green chilli 1 teaspoon coriander seeds 1/2 teaspoon fennel powder 1 teaspoon red chilli powder 1/2 teaspoon garam masala 1/2 teaspoon ginger powder Salt to taste Oil for frying
Make the dough by mixing maida, salt, ghee, and water. Set aside and cover with a damp cloth.
Prepare the filling by grinding the soaked moong dal.
Mix cumin seeds, hing, green chilli, coriander seeds, and fennel powder and cook on a medium flame.
Mix in ground moong dal, red chilli powder, salt, garam masala, and ginger powder till it becomes aromatic.
Take small portions of the dough, roll them into circles, add a spoonful of filling and seal the edges.
Heat up the oil and deep fry the kachoris till they are golden brown and crispy.
Serve the kachori with tamarind chutney and enjoy.
