Kadai paneer features cubed cottage cheese simmered in a mixture of khade masale, tomatoes, onions, and a blend of Punjabi spices. To make the spicy North Indian dish at home, follow this recipe.
For The Masala: 2 tbsp coriander seeds 2 tsp cumin seeds 2 tsp fennel seeds 3 dried red chillies 2 tsp black peppercorns
For The Gravy: 3 tbsp vegetable oil 1 onion 1 capsicum 1 inch ginger 2 cloves garic 2 tomatoes 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tsp garam masala powder 1/2 tbsp coriander-cumin powder Salt to taste 1 cup water 200g paneer 1 tsp dried fenugreek leaves Coriander leaves for garnish
Dry roast all the spices. Grind into a coarse powder.
Sauté chopped onion, capsicum, ginger, and garlic. Add chopped tomatoes.
Mix in spices, pour some water, and bring the gravy to a boil. Simmer for 10 minutes.
Add pan-fried paneer cubes and cook for another 2-3 minutes.
Stir in the ground masala and kasuri methi. Garnish with coriander leaves and serve.
