Sattu ladoo may sound simple until you realise the powerhouse of nutrients it is. This quick, easy recipe shows how to make soft, nutty and naturally energising sattu ladoos for winter warmth.

Ingredients

1 cup sattu flour ¼ cup ghee ½ cup powdered jaggery 2 tbsp chopped nuts ½ tsp cardamom powder 1 tbsp milk (optional)

Step 1

In a pan, dry roast 1 cup sattu on low heat until it turns fragrant and the raw taste is removed. Take it out of the oven and let it cool on a plate.

Step 2

In the same pan, gently melt ¼ cup of ghee without heating it. This will help in binding ingredients smoothly.

Step 3

Mix the roasted sattu with ½ cup powdered jaggery and ½ tsp cardamom. Stir everything well to avoid the formation of tiny lumps later.

Step 4

Add chopped nuts such as cashews, almonds and raisins and mix everything well.

Step 5

Now, pour the melted ghee gradually on the sattu and mix with your fingertips. If the mixture feels crumbly, add 1 tbsp of milk to make it softer.

Step 6

Start making ladoos while the mixture is still warm. Let it cool down completely and then store it in an airtight steel box for a longer shelf life.
