A staple ingredient in Asian cuisine, rice noodles need specific expertise to cook them. However, with a few easy steps, you can ace the process.
250g chopped meat ¼ cup soy sauce ¼ cup rice wine 1 tsp white pepper powder 1 tsp Chinese five spice 1 tsp corn starch 4 dried Chinese black mushrooms, soaked and thinly chopped 1 pack of rice vermicelli, cooked 2 large eggs ¼ tbsp of chopped garlic cloves 1 tbsp dried shrimp
1 chopped carrot 1 chopped onion 1 cup bean sprouts 1 chopped napa cabbage Salt as needed Cilantro, as needed Oil for cooking
Place the meat into a mixing bowl and pour in soy sauce and rice wine. Sprinkle white pepper, five spices, and cornstarch. Mix well and set aside.
Heat oil in a wok, pour in the eggs, cook until firm, and flip once. Remove egg and allow to cool. Then thinly slice on a plate.
Stir in garlic and dried shrimp and cook until the shrimp becomes fragrant. Add in the meat and cook for about 4 minutes.
Stir in onions and carrots. Cook until carrots soften. Add beans, napa cabbage, and sliced mushrooms.
Cook and stir. Transfer to a bowl. Heat the remaining oil in the wok. Stir and drain the noodles. Garnish and serve.
