From coastal regions of Maharashtra and Goa, sol kadhi is a refreshing spice-infused pink drink made from kokum and coconut milk. It also aids digestion, making it a staple in coastal homes.
1 coconut 8-10 dried kokums ½ tsp sugar 1 green chilli 1-inch ginger 1 garlic clove 1 tsp cumin seeds ½ tsp black salt ¾ cup hot water A few curry leaf sprigs Salt to taste Coriander leaves, for garnish
Start by breaking and scraping the coconut. Add kokum pieces to hot water an let it soak.
Squeeze the juice out of softened kokums. Strain it. Keep pulp aside.
Add scraped coconut to the blender jar. Add cumin seeds, garlic, ginger and warm water. Blend and set aside.
Strain through muslin cloth. Make sure to extract as much milk from the coconut as much as you can.
Add the residue back to the blender. Add warm water and blend. Extract the second milk of the coconut
Mix the first and second milk. Add salt, black salt, and kokum pulp and mix well. Serve chilled!
