You can already imagine how lovely and exquisite a rabri faluda is going to be in the summer. Beat the heat by following this recipe!
1 cup falooda noodles 4 cups milk ½ cup sugar ½ tsp cardamom powder A pinch of saffron strands 1 cup of chopped fruits ¼ cup chopped nuts Rose syrup, as needed Saffron strands, for garnish Chopped nuts for garnish
Prepare the faluda noodles by boiling them in water until they are cooked. Drain and rinse with cold water to prevent sticking.
In a saucepan, heat milk and bring it to a boil. Reduce the heat and simmer until the milk reduces to half its original quantity, stirring occasionally.
Add sugar, cardamom powder, and saffron strands to the milk. Stir well until the sugar dissolves completely.
Allow the rabdi to cool down to room temperature and then refrigerate it for a few hours until it becomes thick and creamy.
To assemble, take serving glasses or bowls and start by layering the faluda noodles at the bottom.
Pour a generous amount of chilled rabdi over the noodles, making sure to cover them completely.
Add a layer of chopped. Sprinkle some chopped nuts. Drizzle rose syrup over the nuts and fruits to add a touch of sweetness and aroma.
Repeat until the glasses or bowls are filled. Garnish and serve rainbow rabri faluda!
