Make Protein-Rich Lauki Noodles For A Vegan-Friendly Bowl Of Comfort

Ingredients

3 cups bottle gourd, julienned 5-6 garlic cloves, chopped ½ medium-sized onion, sliced ½ red bell pepper ½ green bell pepper ½ yellow bell pepper Oil, as needed 1.5 tbsp peanut butter 1.5 tbsp soy sauce 1 tbsp sriracha sauce 1.5 tbs chilli oil ½ lemon juice 1 tsp honey 1 tsp sesame seeds

Step 1

Once julienned, sprinkle the lauki or loodles with salt and set aside to remove water.

Step 2

In a bowl, mix peanut butter, soy sauce, and sriracha sauce, chilli oil, lemon juice, honey and sesame seeds. Mix and set aside.

Step 3

Heat a wok, add oil and chopped garlic. Sauté until golden brown. Add onions and bell peppers.

Step 4

Add salt and saute for 1-2 minutes. Make sure they are crunchy. Pat the lauki dry.

Step 5

Add them to the wok. Cook for 5 minutes. Switch off the flame. Pour the sauce over it.

Step 6

Give everything a few gentle tosses. Serve hot!
