Who said you need to wait to make a plum cake till Christmas? With Narmada Sharma’s easy-to-follow recipe, you can make the fruity plum cake within an hour, pair it with your tea or coffee, and enjoy.
50 g black raisins 50 g green raisins 50 g brown raisins 25 g blueberries 50 g Tutti Fruity 200 ml Orange juice For Molasses: 1/4 cup Sugar 1/4 cup Jaggery 200 ml Water Dry ingredients: 1 cup Maida 1/4 tsp Salt 1/2 tsp Cinnamon powder 1/4 tsp clove powder 1/4 tsp nutmeg powder 1/2 tsp ginger powder 1/2 tsp Baking powder 0.13 tsp baking soda
Wet ingredients: 100 g Butter 1 tbsp Brown Sugar 75 ml Orange juice 50 g Prepared blackjack 1/2 cup condensed milk 1 tsp Vanilla extract 40 g almonds chopped 1/2 Lemon zest of lemon 1/4 Orange zest of orange 1 tbsp reserved orange juice
Soak raisins, blueberries, and tutti frutti in orange juice overnight.
Cook sugar, jaggery, and water on medium heat till thick. Let it cool.
Sift maida, salt, cinnamon powder, clove, nutmeg, ginger powder, baking powder, and baking soda.
Beat butter and brown sugar. Add orange juice, cooled molasses, condensed milk, and vanilla essence.
Mix in almonds, lemon, and orange zest. Slowly mix the dry and wet ingredients, and fold in the fruits.
Bake at 160°C for 45-50 minutes. Let it cool, slice, and enjoy the plum cake.
