Appam is a traditional staple from Kerala that is known for having crispy, paper-thin edges and a thick centre. For a quick breakfast or a healthy snack, you can make appam with this South Indian recipe.
1 cup raw rice ¼ cup cooked rice ¼ cup grated coconut ¼ teaspoon baking soda 1 teaspoon sugar Salt to taste Water as needed
Rinse the raw rice and soak it in water for a couple of hours.
Drain and grind the soaked rice with grated coconut, cooked rice, and water till consistent.
Add baking soda, sugar, and salt. Let the batter ferment overnight.
Heat a pan and pour a ladleful of batter. Cover the pan and cook the appam for 2-3 minutes.
Once cooked, transfer the appam to a plate and serve with coconut chutney.
