Adding greens to your diet can be difficult. But one-pot recipes can help in bridging the gap. Such as this one-pot palak rice recipe, which is cooked in the best of spices.
1 cup basmati rice 1.5 cups palak, finely chopped 1 onion 2 chillies ½ cup green peas 1 tsp ginger-garlic paste ¼ tsp sugar ¼ tsp turmeric 1 bay leaf 1 tbsp ghee 1 inch cinnamon stick 2 cloves 1 cardamom ¾ tsp shahi jeera
Soak basmati rice. Clean and chop the spinach. Heat a pressure cooker.
Add ghee, cardamom, bay leaf, cinnamon and cloves. Temper it. Add the shahi jeera.
Add sliced onions and green peas. Add ginger garlic-paste and green chillies.
Fry for 2 mins on medium flame. Add the spinach and sugar. Cook until the leaves shrink.
Add salt, rice, turmeric and water. Bring it to a boil. Stir well. Pressure cook for 2 whistles.
Once done, let the steam go. Open the lid. Fluff the rice. Serve with the preferred choice of side dish.
