Moru Curry is a Kerala-style yoghurt-based curry tempered with spices. It is a tasty side dish made by tempering spices in thick buttermilk, and can be paired with rice.
2 cups buttermilk 1/2 cup water (to adjust consistency) 1/4 teaspoon turmeric powder Salt: To taste For Grinding: 2 tablespoons grated coconut 1-2 green chillies 1 tsp cumin seeds 1/2-inch piece of ginger For Tempering: 2 tsp coconut oil 1/2 tsp mustard seeds 2 dried red chillies 1 sprig curry leaves A pinch of fenugreek seeds (optional)
In a bowl, mix buttermilk with turmeric powder, salt and set aside.
Blend grated coconut, green chillies, cumin seeds and ginger into a smooth paste with a little water.
Mix the ground paste with buttermilk, heat on a low flame, stirring continuously until warm.
Heat coconut oil, splutter mustard seeds, add fenugreek, red chillies, curry leaves and pour tempering in the buttermilk mixture.
Serve the moru curry with steamed rice and enjoy!
