Recipes at home need to be fresh and hydrating for the summer. Vaal usal is a sweet and spicy Maharashtrian lima bean dish cooked with Malvani masalas and perfect to beat the heat!
2 tbsp of coconut oil A pinch of hing 1 tsp mustard seeds 5-6 green chillies 1 sprig of curry leaves 500g fresh lima beans 1 tsp garlic paste ½ cup fresh grated coconut 2 tbsps chopped coriander 1 tsp sugar Juice of ½ a lime 1 cup water Salt to taste
Heat a pan on medium flame. Add coconut oil. Add mustard seeds, curry leaves and split chillies.
Let them splutter. Add vaal or lima beans and saute for 2-4 minutes. Pour ½ cup water. Cover and cook.
Once lima beans are soft, add garlic paste, grated coconut, salt and coriander leaves.
Mix well and add the remaining water. Cover and cook again until the vaal or lima beans are cooked through.
Sprinkle the sugar and salt. Mix it and cook for a minute. Remove from heat and serve!
