Sabudana Vada is a crispy snack made from soaked sabudana (tapioca pearls), boiled potatoes, peanuts, and spices. Popular during fasting, it has a crunchy exterior and a soft, flavourful inside. Usually served with chutney, it’s a delicious and gluten-free dish.
1 cup sabudana (tapioca pearls) 2 potatoes 1/2 cup roasted peanuts 1-2 green chillies 1 tsp of cumin seeds 1 tsp grated ginger 2 tbsp coriander leaves Rock salt
Rinse the sabudana in water until the water runs clear to remove excess starch. Soak it overnight.
Mix all the ingredients to form a dough-like consistency.
Grease your palms with a little oil. Take a small portion of the mixture and flatten it slightly to form a patty.
Heat oil in a kadhai. Drop a small piece of the mixture into the oil; if it sizzles and rises to the surface, gently slide a few wadas into the hot oil, ensuring not to overcrowd the pan.
Remove the vadas and drain them on paper towels to remove excess oil. Serve with sweetened yoghurt.
