Make Madurai Famous Jigarthanda At Home

Made with reduced milk, natural coolants, and topped with ice cream, now you too can make this Madurai famous drink at home following these simple steps.

Ingredients - 4 cups milk, 1 tsp edible almond gum or badam pisin, 3 tbsp nannari sharbat or sarsaparilla root syrup, 3 scoops of vanilla ice cream, and 3 tbsp sugar.

Soak the badam pisin in 1 cup of water overnight.

Add the milk to a saucepan and reduce it to 2½ cups worth.

Once the milk is reduced, add the sugar and stir it in. Store it in the fridge to cool down.

In 3 tall serving glasses, add 1 tbsp each of the badam pisin jelly and nannari sharbat.

Top them off with reduced milk and a scoop of vanilla ice cream in each glass and serve cold.
