Every significant celebration, including weddings, birthdays, and parties in Bengal, includes Kolkata fish fry. It is also a great snack to serve to guests. The secret of such yummy tastes is the masala batter. Here's a recipe to add that authentic masala to your fish fry at home.
1 cup of loosely packed coriander leaves ½ cup of mint leaves 4 - 5 green chillies 1 tablespoon of ginger paste 1 tablespoon of garlic paste 1 teaspoon of black pepper powder 1 teaspoon of garam masala ½ teaspoon of Kashmiri red chilli ½ teaspoon of chaat masala.
1 tablespoon of lemon juice Salt to taste 2 eggs, beaten 1 cup of breadcrumbs ½ cup of maida Cooking oil
In a mixing bowl, crack open the eggs, add the salt, ginger paste, garlic paste, black pepper powder and breadcrumbs. Mix well.
Now, add the flour and mix the batter until it reaches a smooth consistency.
Marinate the fish fillets with salt and lemon juice gently. Set it aside for 10 minutes.
Dip the fish fillets into the masala batter gently and coat them on both sides. Sprinkle water as needed.
Take the fillets out of the batter and coat them with the breadcrumbs on both sides. Repeat the process for each
Deep-fry them on medium heat in a large pot. Remove from the pot. Serve Kolkata-style fish fry fried in authentic Bengali fish fry masala.
