This Thai-style omelette has soft inside layers, crispy edges, and savoury, tangy flavours thanks to a few basic ingredients.
2 large eggs ½ tsp lime juice 1 tsp Thai fish sauce 1 tbsp water 1 tbsp rice flour or corn starch ¾ cup vegetable oil
In a mixing bowl, combine the eggs, lime juice, fish sauce, water, and rice flour or cornstarch.
Mix with a fork until frothy. If the flour forms lumps, break them up with your fingertips.
Heat the vegetable oil in a small pot or round-bottom wok over medium-high heat until it begins to smoke.
Hold the egg bowl approximately a foot over the pan and pour the egg mixture into the oil all at once.
The egg mixture immediately puffs up. After 20 seconds, flip the omelette.
Let the other side cook for another 20 seconds. Remove the omelette from the pan and serve immediately!
