Make Idli Dhokla To Get The Best Of South Indian And Gujarati Staples

Imagine combining the South Indian staple idli and the Gujarati dhokla into one single recipe. With this fusion recipe, you can get the flavour of both of your favourites. Follow these easy steps.

Ingredients

1 cup besan 1/4 cup rava 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 teaspoon hing Salt to taste 1/4 cup curd 1 tablespoon oil Water as needed For tempering: 1 tablespoon oil 1/2 teaspoon mustard seeds 1/4 teaspoon cumin seeds 1 green chilli A few curry leaves

Step 1

Mix besan, rava, curd, water, turmeric powder, red chilli powder, hing, and salt. Let the batter rest.

Step 2

Grease the idli moulds and pour the batter.

Step 3

Steam for about 10-15 minutes till the idlis are fluffy. Let them come to room temperature.

Step 4

Heat some oil and add mustard seeds, cumin seeds, curry leaves, and green chilli for tempering.

Step 5

Pour the tempering over the idli dhokla, garnish it with curry leaves, and serve.
