Sattu Paratha is a protein-rich, traditional Bihari dish made with whole wheat flour and a spiced roasted gram flour (sattu) filling. It is flavoured with mustard oil, ajwain, green chilies, ginger, and lemon juice, then cooked on a tawa with ghee. Served with curd or pickle.
2 cups whole wheat flour ½ tsp salt Water (as needed) 1 tsp oil (optional) 1 cup sattu (roasted gram flour) 2 tbsp finely chopped onion
2 tbsp finely chopped coriander leaves 1-2 green chillies chopped 1 tsp grated ginger ½ tsp ajwain (carom seeds) ½ tsp kalonji (nigella seeds) (optional) 1 tsp mustard oil Juice of ½ lemon Ghee or oil for frying Salt to taste
Mix whole wheat flour, salt, and water to form a soft dough. Knead well and let it rest for 20 minutes.
In a bowl, mix sattu, onion, coriander, green chilies, ginger, ajwain, kalonji, mustard oil, lemon juice, and salt. Add a little water to bind the mixture.
Roll out a small dough ball, place the sattu filling in the center, and seal it. Roll it gently into a paratha.
Heat a tawa, cook the paratha on both sides, applying ghee or oil until golden brown.
