Moti chur laddu is a festive favourite, known for its soft, melt-in-the-mouth sweetness and irresistible aroma. This moti chur laddu recipe brings classic halwai-style richness home, giving every bite a warm, nostalgic celebration of Indian tradition.
1 cup sugar 1 cup water 1 cup besan 2 tbsp ghee ½ tsp cardamom powder 2 tbsp chopped nuts Oil for frying
Prepare a smooth, thin batter by mixing besan and water, ensuring no lumps remain so the boondi forms perfectly when fried.
Heat oil and gently tap the batter through a perforated ladle, creating tiny boondis that fry to a soft golden colour.
Boil sugar with water until it reaches a slightly sticky, one-string consistency, and add cardamom for aroma.
Mix the warm boondis into the hot syrup, allowing them to absorb the sweetness before adding ghee and chopped nuts.
Once the mixture cools slightly, shape it into round laddus by pressing gently between your palms.
