Duppad or dupde, meaning "two layers," is a chapati with a thin smear of ghee and wheat flour. It is a staple in many Gujarati households across the country and can be paired with any curry.
2 cups whole wheat flour Salt, as needed Oil, 1 tsp Oil for dough, 4-5 tbsp Ghee, as needed Water, as needed
Take 1 cup whole wheat flour/atta and reserve the remainder for dusting and filling.
Add salt and knead into a soft dough with water. (The same as for chapati). Cover and let it settle for 20-30 minutes.
Using a small amount of ghee on your palms, knead it once. Roll out two small amounts of dough into thin sheets.
Smear one sheet with a thin layer of ghee. Sprinkle little whole wheat flour on it and spread evenly.
Place the second layer on top and press down slightly to seal the corners. Roll this into a single thin sheet.
Heat a tawa and wait for it to bubble slightly before flipping over. Let it brown in some places.
Pick up the top part on the side and gently pull apart. There will be two layers. Serve dupde roti for lunch or dinner.
